Japanese-style salmon

An offer for those who like Japanese cuisine. Thanks to the right spices, which blend in perfectly with the fish, the dish takes on an oriental character.

Ingredients:

  • 2 tbsp red miso
  • 1 tablespoon of grated ginger
  • Onion finely chopped
  • Brown sugar
  • Garlic clove squeezed
  • ½ tsp sea salt

Preparation:

The grate should be warmed up and oiled. Mix all the marinade ingredients in a separate bowl and rub the fish with it. We postpone for a few minutes. Place the fillet on a hot wire rack and grill for 12 – 14 minutes on each side.

Smoked salmon Jerk

The variation consists in a combination of aromatic spices with alder smoke produced by smokehouses, which perfectly match salmon. I compose well with the sweet barbecue sauce.

  • 1 teaspoon onion powder
  • 1 teaspoon dried onion flakes
  • 1 teaspoon ground allspice

We combine the ingredients of the spice mixture together and thoroughly rub the salmon with it. To leave the fish meat with the aroma of spices, leave it for 1-2 hours. A smokehouse is needed for this recipe. It should be prepared for smoking with alder smoke at 95 degrees. We smoke the fish for at least one hour.

Salmon on a cedar board

Grilling on cedar salmon boards is the perfect way to get a great taste and aroma. The fish does not lose its delicate taste and at the same time I get a characteristic smoky aroma thanks to wooden boards.

Ingredients:

  • 4 salmon steaks
  • 2 tablespoons of olive oil
  • 2 tablespoons Dijon mustard
  • 2 teaspoons of black pepper
  • 1 teaspoon sea salt
  • 2 cloves of garlic, squeezed
  • 1 cedar board soaked in water

Preparation:

We start by warming up the grill. We combine olive oil, salt mustard and pepper. Lubricate the salmon on both sides with the mixture thus prepared. The cedar board should be soaked in water for 30 minutes beforehand. Place the steaks on the board prepared in this way. We grill at medium temperature for 30 – 40 minutes.
